Honestly, eating a lot of salad just stinks. Sometimes.

Even though we have an idea of what  foods we should be eating, it’s not always fun, interesting or tasty.

At the end of a long day, a long commute or a trying week, it’s hard to convince ourselves that a big bowl of romaine lettuce is just the thing we are craving.

If you’re tired and the creative kitchen juices seem to have run dry…try out this salad recipe that’ll ignite a full on salad obsession.

It is a zing-y salad full of

Creamy. Avocado. Broccoli. Goodness.

It takes a few minutes to prep and then you can prop your feet up and smugly munch away knowing you are a total diva of health. 

CREAMY BROCCOLI SALAD

Ingredients:

  • 1 avocado
  • 1 Tbsp vegan mayonnaise (or regular mayonnaise)
  • 1 Tbsp date syrup or pure maple syrup
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp raw apple cider vinegar
  • 2 Tbsp Raisin Vinegar, plum vinegar or other sweet vinegar (I used an Orange Blossom Honey vinegar from Harris Teeter…which is also so ridiculously good on chicken or just about anything)
  • 1/2 tsp minced garlic
  • 1/2 C. unsweetened non-dairy milk of choice
  • 1 head of broccoli, cut into bite sized pieces
  • 1/2 C. shredded carrots
  • 1/2 C. red onion, finely chopped
  • 1/4 C. raisins
  • 1/4 C. raw or salted roasted sunflower seeds
  • freshly ground salt n pepper to taste

INSTRUCTIONS

  1. In blender or food processor mix the first 8 ingredients to make the dressing. Blend until smooth.
  2. In a large bowl combine all the remaining ingredients for the salad– broccoli, carrots, onion, raisins and sunflower seeds.
  3. Add dressing to salad mix and toss until well coated. Season with freshly ground salt n pepper and chill in refrigerator for a couple hours. (I didn’t follow this recipe instruction. I ate the salad immediately because it’s just THAT good.)

This recipe makes a big salad and the leftovers are still yummy 1-2 days later.
